Christmas Cheese & Vege Skewers with Cheesy Star Crackers

 

These cute Cheesy Star Crackers can be made as a fun cooking activity with preschoolers during the festive season and are perfect to take to shared kai celebrations, add to the lunchbox or make as an alternative to shop-bought crackers - helping you cut down on food packaging and enjoying less processed foods. They can also be a great way to reduce food waste by using those bits of leftover vege lying around in the fridge. For this blog we’ve used a combination of kumara and carrot, but you could try other combinations or single vegetables, such as courgette and carrot, pumpkin and kumara, broccoli or beetroot.

To accompany the Cheesy Star Crackers, we made red, white and green Christmas-themed Cheese and Vege Skewers, using cherry tomatoes, cucumber and cheese cubes. You could also use green and red capsicums, normal tomatoes, spinach, lettuce or herb leaves, to create a similar effect. These are easily-accessible, everyday foods, but by skewering the colourful ingredients in a pattern and serving them alongside the Cheesy Christmas Crackers, will make it look extra special and will no doubt standout in any Christmas spread and have children excited to try.

Cheesy Star Crackers

Recipe by Clean Plate

Serves 10

Ingredients:
1 1/2 cups grated vegetables (we used a mixture of carrot and kumara)
2 eggs, lightly beaten
1 cup of Edam cheese, grated
1 1/2 cups of flour (we used a mixture of wholemeal and high grade), plus more for rolling

Method:

  1. Preheat the oven to 180°C.

  1. Grate the vegetables on the thin side of the grater. Place the grated vege into a clean tea towel or cloth and squeeze it to remove as much moisture as possible.

  2. Place grated vege into a bowl and mix with the cheese and eggs.

  3. Slowly mix in the flour. If your mixture is sticky, add more flour as needed, until reaching a good consistency for rolling. 

  4. Flour your surface and the rolling pin and roll out quite thin (about 3-4 mm thick).  Cut out the stars and place on a baking tray lined with baking paper.

  5. Bake for about 10 mins or until crackers are golden and crispy.
