Auntie Rony’s Banana, Oats & Choc Chip Pancakes
These pancakes are dead easy to make and absolutely DELICIOUS! Trust me!
This recipe was given to me by one of my closest friends, Rony, whom I’ve known since forever and is just like a sister to me, and an aunt to my daughter. Auntie Rony is the bomb, and when she says something is right, or good, you better believe it! 😊
That’s why when she told me about these amazing BANANA+OAT PANCAKES she had been making, I asked for the recipe straight away, and sure enough, I wasn’t disappointed! Auntie Ron is also a vegan, which I’m not, so I’ve adapted the recipe to suit what I had at home. In case you’d like to make the vegan version instead, I’ve kept the original ingredients in brackets (see recipe below).
Also, as most of you who follow Clean Plate know, a lot of our recipes are created with early learning settings and schools in mind, and if that’s where you’ll be cooking the pancakes (after lockdown), please be mindful of any food restrictions, such as a ‘nut free’ policy, and omit the peanut butter all together if that’s the case. You could also skip the chocolate chips, saving it for home cooking or special occasions – the recipe will work just as well.
If cooking at home, you can choose to cook the whole batch at once or just the amount you need, keeping the remaining batter in the fridge for up to 3 days. Also, if you’ve any leftover cooked pancakes, they can be stored in the fridge, covered, for up to 2 days. They actually taste quite nice cold!
To serve, I’ve kept my pancakes pretty simple and just added a few fresh blueberries and a drizzle of maple syrup, but it’s up to you to decide how much to fancy them up – or not.
As mentioned at the start, they’re delicious on their own, but anything from a light dusting of icing sugar and fresh or cooked fruit, to extra chocolate, nuts, or even a dollop of fresh cream, yoghurt or mascarpone, would be heavenly too.
AUNTIE RONY’S BANANA, OATS & CHOC CHIP PANCAKES
Makes about 15 pancakes
(For vegan: use ingredient alternatives in brackets)1 ripe banana, mashed
1 egg, lightly beaten (omit the egg or replace for chia or flax egg)
3 Tbsp milk (plant-based alternative)
1 Tbsp peanut butter - optional
1 Tbsp butter, melted (coconut or avocado oil)
½ cup oats
¼ cup self-raising flour
3 Tbsp chocolate chips - or any chocolate available, chopped -optional
Method:
1. Add mashed banana, egg, milk, peanut butter and melted butter to a bowl and mix until well combined.
2. Add the oats and self-raising flour and fold gently, until just combined.
3. Add the chocolate pieces and gently fold to combine.
4. Heat a frying pan on medium heat, greased with cooking spray, butter or oil.
5. Fry spoonfuls of the batter, using a spatula to turn halfway, and cooking both sides.
