Peanut Butter & Date Smoothie & Bites
Two super quick and nutritious snacks using this delicious combo
Yummy DATE & PEANUT BUTTER Smoothie and Bites combo! Two long-shelf-life ingredients I often go to when in need of a fuss-free, wholesome and delicious snack!
The DATE & PEANUT BUTTER BITES are just that, dates filled with good-quality, peanuts-only, peanut butter, crunchy or smooth, go for your favourite - mine is crunchy :)
These bites will keep very well in a sealed container in the fridge. In fact, they’re rather scrumptious cold, meaning you can make a batch and use them throughout the week, popping one or two as a “treat” in the kids’ lunchboxes and yours. That’s if they last that long! (Just between us… They are great with a cup of coffee too!)
The DATE & PEANUT BUTTER SMOOTHIE is one of my top go-to flavours. Adding rolled oats and banana makes it extra filling and creamy, and much more nutritious and tastier than any shop-bought, mass-produced flavoured milk around.
TIP: Pop in the freezer overnight for a delicious frozen smoothie lunchbox treat. Zero-waste, reusable drink pouches are perfect for this.
Date & Peanut Butter Smoothie
Serves 2
Ingredients:
2 – 3 dates, soaked for a few minutes in a little boiling water (to soften)
1 Tbsp peanut butter
1 heaped Tbsp oats
1 fresh or frozen banana, peeled
1 glass (200 ml) milk (or dairy-free alternative)
Method:
1. Place all ingredients in a blender and blend well until creamy and frothy.
Date & Peanut Butter Bites
Serves 2
Ingredients:
4 - 6 dates
2 - 3 tsps Peanut Butter (crunchy or smooth)
Method:
1. Carefully open dates and stuff each with about 1/2 tsp peanut butter. Press gently to close. Serve!
2. Alternatively, store Date & Peanut Butter Bites in the fridge in a airtight container for up to a week.
